The Rules:
• Normal Sudoku rules apply
• "V" can be either "inequality" (points to smaller digit) or "digits sum to 5" or both. If the two digits do sum to 5, the "V" can be in any orientation and does not necessarily indicate greater than/less than.
• Digits must not repeat in cells that are a knight's move apart.
• The digits in a cage must sum to the number printed in its corner.
• Entering a correct digit will clear the fog from around that cell.

Great fun, but felt a lot easier than 5*
Surprised how many superfluous clues there are too.

62:05, as someone who is far from an expert, I think that’s pretty good for a 5-star! Especially since I did it without a solution link, and probably 15 minutes of that was backtracking due to an incorrect digit. Very nice puzzle, I really like the scattered fog.

Important bug: if I try to use letters to represent digits, the fog will be cleared revealing hidden clues
--- Thank you @CHRosenthal, someone else pointed that out as well. I just updated the link with the embedded solution, the fog doesn't work correctly without that.
